My famous (with my husband) chocolate chip cookies
1 cup butter
1 cup sugar
1/2 cup brown sugar
2 1/4 cup flour
1 tsp baking soda
1 tsp salt
2 eggs
1 1/4 tsp vanilla
1/2 cup dark chocolate chips
1/2 cup milk chocolate chips
Cream sugars and butter. Add eggs and vanilla, mix well. Combine the dry ingredients in a separate bowl. When the wet ingredients are combined, add the flour mixture in 3 increments. When the dry ingredients are incorporated, mix in the chocolate chips. Use two spoons to drop dough onto a parchment lined cookie sheet 1" apart.
Bake at 350° for 11-13 minutes.

Accidentally vegan chocolate chip cookies
I was out of eggs, so I used pumpkin. These are delicious! Pillowy and soft without a drastic flavor change. Unless I already knew, I would never guess pumpkin is the secret!

Whole Wheat Vegan Pie Crust
My whole wheat vegan pie crust is perfect for hearty pies, like this pear pie. (Plus, I find vegan pie crusts to be easier to transfer from board to pie plate without butter's water content.)
2.5 cups whole wheat flour
2.5 tbsp sugar
1/4 cup + 1 tsp coconut oil (cold)
12 tbsp vegan butter (cold and cubed)
1 tbsp -1/3 cup cold water
Mix sugar and flour. Rub in coconut oil with your fingers. Using a pastry cutter, cut in the butter until dough is crumbly and has little pea-sized butter pieces. Add in water until dough starts to come together. Split dough in half, form 2 discs, wrap in foil, refrigerate until ready to be blind baked or filled.
